Carrot Cakes
- In a bowl, mix: flour almonds, amaranth, cinnamon, ginger, baking powder, salt and nutmeg. Set aside.
- In another bowl, mix: coconut milk, eggs, butter, mix and add in the mixture of the previous bowl.
- Add the grated carrots, raisins, walnuts (the mixture will be very thick).
- Heat a pan with a little butter, pour a tablespoon and wait to cook, flip and cook on the other side.
- Serve with honey.
