Carrot Cakes

Yummy and nutritious cakes for any time of the day.

INGREDIENTS

Carrot Cakes

  • ¾ cup almond flour (almonds blended) 
  • 3 tbsp. amaranth 
  • 1 tsp cinnamon 
  • ½ tsp ginger 
  • 1 tsp baking powder
  • 1/8 tsp nutmeg 
  • 1/2 cup coconut milk 
  • 3 eggs 
  • 3 tbsp. butter 
  • 1 tbsp. vanilla 
  • 1 cup carrot, shredded
  •  1/3 cup walnut, chopped
  •  3 tablespoons of raisins, chopped.

PREPARATION

Carrot Cakes

  1. In a bowl, mix: flour almonds, amaranth, cinnamon, ginger, baking powder, salt and nutmeg. Set aside.
  2.  In another bowl, mix: coconut milk, eggs, butter, mix and add in the mixture of the previous bowl.  
  3. Add the grated carrots, raisins, walnuts (the mixture will be very thick). 
  4. Heat a pan with a little butter, pour a tablespoon and wait to cook, flip and cook on the other side.
  5. Serve with honey.
